Margarita Grilled Chicken



Nothing like a little Summertime Grillin' to make you want to get to partying! And, no party is complete without a little Margarita:

Margarita Grilled Chicken

* 3 pounds boneless, skinless chicken breast halves
* 2 cups bottled margarita mix


DIRECTIONS

1. Pour the margarita mix into a large resealable plastic bag. Add the chicken breasts, and press out as much of the air as possible before sealing. Marinate 4 to 8 hours in the refrigerator.
2. Preheat an outdoor grill for medium-high heat.
3. Lightly oil the grill grate. Remove chicken from marinade, and discard the marinade. Grill chicken 8 minutes per side, or until juices run clear.

Chocolate Peanut Butter Cream Pie


Chocolate Peanut Butter Cream Pie

1. 3/4 cup hot fudge dessert topping, divided
2. 1 (6 ounce) HONEY MAID Honey Graham Pie Crust
3. 1/2 cup creamy peanut butter
4. 1 1/4 cups cold milk
5. 2 pkg. (4 serving size) JELL-O Vanilla Flavor Instant Pudding & Pie Filling
6. 1 (8 ounce) tub COOL WHIP Whipped Topping, thawed, divided



1. Spoon 1/2 cup of the fudge topping onto bottom of crust. Place in freezer 10 min.
2. Mix peanut butter and milk with wire whisk in large bowl until well blended. Add dry pudding mixes; beat 2 min. or until well blended. (Mixture will be thick.) Gently stir in half of the whipped topping. Gently spoon over chocolate layer. Top with remaining whipped topping.
3. Refrigerate 3 hours or until set. Drizzle with remaining 1/4 cup fudge topping just before serving. Store leftover pie in refrigerator.

Yield: 8 servings

TRIBUTE TUESDAY - Angel Food Ministries


What is Angel Food Ministries?

With a heart to help others and a generous spirit, Joe and Linda Wingo founded Angel Food Ministries in 1994 to provide food for friends and neighbors who were struggling financially. Today, they are still doing the same thing. The Angel Food program now is helping provide food relief to more than 500,000 families each month.

Angel Food Ministries is a non-profit, non-denominational organization dedicated to providing grocery relief and financial support to communities throughout the United States. The program began in 1994 with 34 families in Monroe, Georgia (between Atlanta and Athens), and has grown to serve hundreds of thousands of families every month across 35 states. Angel Food Ministries crosses denominational lines and has spread the good news of the gospel of Christ through salvation tracts that are placed in each food order.

Everyone Qualifies

There are no qualifications, minimums, income restrictions, or applications.

Everyone is encouraged to participate. Some churches even encourage participants to apply the money they saved to help someone else in need.

Blessings by the Box

Angel Food is available in a quantity that can fit into a medium-sized box at $30 per unit. Each month's menu is different than the previous month and consists of both fresh and frozen items with an average retail value of approximately $60. Comparison shopping has been done across the country in various communities using a wide range of retail grocery stores and has resulted in the same food items costing from between $42 and $78.

Generally, one unit of food assists in feeding a family of four for about one week or a single senior citizen for almost a month. The food is all the same high quality one could purchase at a grocery store. There are no second-hand items, no damaged or out-dated goods, no dented cans without labels, no day-old breads and no produce that is almost too ripe.

Also offered are specialty boxes such as steaks, chicken and pork. Many participants in this bonus program appreciate the expanded choices. Additionally, there is no limit to the number of units or bonus foods an individual can receive, and there are no applications to complete or qualifications to which participants must adhere. Angel Food Ministries also participates in the U.S. Food Stamp program, using the Off-Line Food Stamp Voucher system.

A TRIBUTE TO OUR SOLDIERS

There is a huge rock near a gravel pit on Hwy.25 in rural Iowa .

For generations, kids have painted slogans, names, and obscenities on this rock, changing its character many times. A few months back, the rock received its latest paint job, and since then it has been left completely undisturbed.

It was thought that the flag was draped over the rock, but it's not. It's actually painted on the rock too.

TRIBUTE TUESDAY - MAKE A WISH

Here is something new that I am going to add to Yummy! Yummy! Yummy! As you see, I am going to call it Tribute Tuesday. Each Tuesday, I will pay tribute to somebody or something that I feel needs special notice. If you like this, let me know and I may do a badge and Mr. Linky (if I can figure them out).



This week, I want to share with you a program that Betty Crocker does with Make A Wish. Each week, Betty Crocker shares a Wish story and chooses a cupcake to match the wish. It is called "Stirring Up Wishes". I don't know why I have not been posting them, but I may try to go back and find them and share them with you.
I am a proud supporter of Make A Wish and I am also proud that the my candle business sponsor is also a supporter (they sponsor many other programs, too).
If you have any extra dollars, and it does not take much, consider donating. I went to the Make A Wish site and bought products, as well. Very reasonably priced and, of course, you know where the money goes. (Shirts were $5 and I bought a bag of 100 bracelets for $25).

CHLOE'S WISH

“I wish to go to my grandparents' farm in England.”

Chloe, Age 7

Seven-year-old Chloe lights up when her mom talks about growing up in England on her grandparent’s 500-year-old farm. But it was a place she could only imagine – a place it seemed she would never be able to visit. Chloe was born with a condition called congenital heart disease. This condition requires oxygen treatments, which make it difficult for her to go on long flights. However, the Make-A-Wish Foundation® found a way to grant Chloe’s wish to visit her family farm in England.

Wish granters made sure all necessary medical care was available to Chloe during her 10-hour flight to London. Once she landed, the magic started. Before heading to the farm, Chloe explored London and even toured Buckingham Palace. “I saw the queen’s jewels and the changing of the guard!” Chloe recalled. Chloe’s relatives gave her a warm greeting when she arrived. She visited with her grandparents and romped around the grounds where her mom played as a little girl. “My nannie would make me jam sandwiches,” she said, remembering tea time with her grandmother.

Chloe’s mom said she never stopped smiling. And Chloe continues to smile every time she recalls her memories of the big London sights and the little family farm.

Chloe’s Favorite Cupcake:

Strawberry-Cream Cheese Cupcakes

The Strawberry-Cream Cheese Cupcakes are a sweet way for Chloe to remember the jam sandwiches her grandmother would make!



1 box Betty Crocker® SuperMoist® yellow cake mix
1 container (8 oz) sour cream
1/2 cup vegetable oil
1/2 cup water
2 eggs
3 tablespoons strawberry preserves
1 package (3 oz) cream cheese, cut into 24 pieces
1 container (1 lb) Betty Crocker® Rich & Creamy cream cheese frosting
Sliced fresh small strawberries, if desired



1. Heat oven to 350°F (325°F for dark or nonstick pan). Place paper baking cup in each of 24 regular-size muffin cups. In large bowl, mix cake mix, sour cream, oil, water and eggs with spoon until well blended (batter will be thick). Divide batter evenly among muffin cups.
2. In small bowl, stir preserves until smooth. Place 1 piece of cream cheese on top of each cupcake; press into batter slightly. Spoon 1/4 measuring teaspoon preserves on top of cream cheese in each cupcake.
3. Bake 18 to 23 minutes or until tops are golden brown and spring back when touched lightly in center (some preserves may show in tops of cupcakes). Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 30 minutes.
4. Spread frosting over cupcakes. Just before serving, garnish each cupcake with strawberry slices. Store covered in refrigerator.
High Altitude (3500-6500 ft): Heat oven to 375°F. Bake 18 to 21 minutes.

How to Make a SkinnyGirl Margarita

When summer is approaching and you're out for a night on the town or hosting a party—it never hurts to watch your waistline while you're drinking. Here's a quick and easy recipe for SkinnyGirl Margarita (or guys—you can drink it too!).

SKINNYGIRL MARGARITA

Things You'll Need:

* Ice
* Blender (if you want it frozen)
* Fresh lime juice (about 1 tbsp.) and wedges for garnish
* 2 oz. white tequila (100 percent agave is very important)
* A tiny splash of triple sec, Grand Marnier or Cointreau (about 1 tsp.)
* Margarita glasses

Step 1

If you want a SKM on the rocks, it's quite simple. Add ice to a rocks glass, add 2 oz. (a two count) of white tequila, the juice of four lime wedges and a splash of triple sec, Grand Marnier or Cointreau. It's that easy!

Step 2

If you're ordering a SKM at a bar, you can have it on the rocks, but I like to replace the triple sec, Grand Marnier or Cointreau with a splash of frozen margarita mix. You get the same great flavor and a little bit of a different texture. It's great!

Step 3

If you want a frozen margarita, combine all of the ingredients in a blender; just make sure that there is 2 oz. of tequila per serving and you're ready to go! Serve in a chilled glass; and if you'd like to garnish the glass, rim it with a lime and dip in salt or sugar or both.

HAPPY MOTHERS DAY TO YOU ALL!


For my fellow mothers, you know that being a Mother is the most wonderful gift that GOD has given us. Treasure your child and cherish them, but above all LOVE THEM WITH ALL YOUR HEART!

For anyone viewing that does not have children yet, be patient. God will bless your life as he has mine, whether with your own child or with the privilege of raising a child for another.






Look at this deliciously, simple creation. Just in time for Mother's Day!


Tortilla Fruit Pizza


Ingredients:

* 4 to 6 Azteca® Flour Tortillas (7 to 10 inches)

* 1/2 cup plus 1 tablespoon Domino® or C&H® Granulated Pure Cane Sugar, divided

* 1 teaspoon ground cinnamon

* 1 container (12 ounces) whipped cream cheese, softened

* 1/4 cup sour cream

* Assorted fresh fruit (sliced strawberries, peaches, kiwi, pineapple, berries, etc.)

Directions:

Remove tortillas from refrigerator. Pierce tortillas several times with fork. Spray each tortilla with cooking spray. Combine 1/2 cup sugar and cinnamon; sprinkle over tortillas. Place single layer of tortillas on baking sheets. Bake at 350° for 8-10 minutes or until crisp and golden brown around the edges. Let cool.
In a medium bowl, combine cream cheese, sour cream and remaining sugar. Spread half the cheese mixture on top of two cooled tortillas; place another tortilla on top of cheese mixture so there are two tortillas per pizza. Spread remaining cheese mixture on top of the stacked tortillas. Top with fruit.
Using a pizza cutter or sharp knife, cut each pizza into wedges. Yield: 4-6 servings.

I am reposting this recipe, now that nice weather is here. It is one of my favorite recipes and, SHHHH, it's pretty good for you!

This recipe is perfect for spring and summer days. Serve it up cold, just make sure you mix it real well before dishing it up because the dressing will settle. It makes a large bowl full and is perfect at picnics or gatherings.

GREEK SALAD

Ingredients:

12 oz. angel hair pasta
1 can sliced black olives
1 can diced tomatoes (recipe called for pimento but I prefer tomatoes; drained)
3/4 cup mayonnaise
4 1/2 Tbs. Cavenders greek seasoning
3/4 cup olive oil
4 1/2 Tbs. lemon juice
1 bunch green onions sliced w/tops (optional)

Instructions:

Cook pasta, drain and rinse.

Combine mayonnaise, olive oil, greek seasoning and lemon juice. Pour over pasta.

Add onions, black olives and tomatoes.

Mix well.

Chill.

Mix really well before serving to redistribute the salad dressing.

Recipe Notes:
You can add Feta cheese, if desired.

Ham Broccoli Braid

INGREDIENTS

* 2 cups cooked ham, chopped
* 1 cup chopped fresh broccoli
* 1 small onion, chopped
* 1 tablespoon dried parsley
* 2 tablespoons Dijon mustard
* 1 1/2 cups shredded Swiss cheese
* 2 (8 ounce) cans refrigerated crescent roll dough


DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, combine ham, broccoli, onion, parsley, mustard and cheese. Stir well.
3. Unroll crescent roll dough, and arrange flat on a medium baking sheet. Pinch together perforations to form a single sheet of dough. Using a knife or scissors, cut 1 inch wide strips in towards the center, starting on the long sides. There should be a solid strip about 3 inches wide down the center, with the cut strips forming a fringe down each side. Spread the filling along the center strip. Fold the side strips over filling, alternating strips from each side. Pinch or twist to seal.
4. Bake in preheated oven for 20 to 25 minutes, until deep golden brown.
